Decaf has had a huge rise in reputation in the last few years, yet, has remained an often overlooked part of speciality coffee collections. Well, rejoice! We love having an exceptional Decaf selection here at Podda & Wren. This time around, we're bringing what is possibly, the best name ever to our Decaf arsenal. Give a big applause, Paradise Mountain! We've sourced this beauty from Papua New Guinea, and we couldn't be happier after securing a small batch of this in late 2024 - we've been vying to get this back to the roastery ever since. Paradise Mountain is processed in a completely chemical free way, using the sugarcane process after it's initially processing at the Goroka Mill, in the eastern highlands of Papua New Guinea - made up from the small farms of various small-holders in the local region, all paying meticulous attention to detail in their small batches to bring together a larger quantity used for Decaffeination exclusively. The Sugarcane Process is an often overlooked process in the market, however, is a particular favourite of ours down to it's lack of carbon footprint and chemical free qualities. Caffeine is removed using a mixture of sugarcane and water, enhancing sweetness while keeping the original characteristics - this is done by a mixture of steaming and submerging the green coffee in spring water, using a recycling system to reuse all the water in the process and caffeine extracted sent off to be used in other products.
