It's back! Pride and place in our blossoming 'Curious Cups' section. This Red Honey Natural emanates from a farm nestled in ancestral forest near the waterfall, 'Gatta', one that flows across its land, offering natural shade and life to coffee trees. They say the waterfall inspires this coffee production in this region, where every cup reflects the centuries of care. In the cup, think Campari and a Peachy Citrus Bloom! On the label we've gone for Blood Orange compote to reflect this, but there is also tonnes of White Peach and its body is certainly a combination of marzipan and a soft sherbet, with a sticky candy or jam-like viscosity! There is a bright bergamot and herb-like finish, particularly as a straight up espresso. Our particular favourite approach here is on filter or batch - we could sip this bold peachy, mayple syrup-like brew all morning! Established 2013, with a dedicated honey process station by 2017, Gatta Farm in Sidama is operated by Daye Bensa and a network of smallholder growers. With this Red Honey Natural, the sun-dried mucilage and high elevation gives a lovely viscosity and sweetness, with every sip giving a clarity of taste.
