Subtext was founded in Toronto in 2017 and quickly built a reputation for some of the highest-scoring light-roast lots in the country. The team sources from competition-level producers across Ethiopia, Colombia, Costa Rica, and Panama, and the roastery has placed multiple finalists at the Canadian Brewers Cup and Barista Championships. Subtext operates a cafe in Toronto's Annex neighbourhood alongside their wholesale program.
