This is a pre-roast blend of all this farmer's varieties and processing methods and beautifully captures the flavours this producer is going for. Owned and operated by the Ramirez-Navarro family, their story begins with Mr. Alexis Ramirez, a lifelong farmer whose passion for the land and dedication to agriculture continues to guide them every day. Though Mr. Alexis passed away a few years ago, his vision and values remain the heart of their work — inspiring them to preserve and grow the family legacy he built with such care. The fermentation process is as follows 1. Fruit picking 2. Cherries rest in plastic containers without oxygen for 4 days 3. Sun dried for approximately 30 days 4. Stored in parchment until preparation for export 250g pack Espresso Recipe 18-19g coffee (finely ground) brew time 28 seconds 38-42ml espresso Filter Recipe 6.5 grams (coarsely ground) coffee per 100ml water brew time 2.5-3.5 minutes
