That began to change when local producers invested in improved processing and higher standards. Today, Jimma is recognized as one of Ethiopia’s premier coffee regions, producing vibrant, complex lots that showcase the area’s full potential. In the 2022/2023 harvest, several Tokuma producers, including Mensur Abahika, began producing washed coffees, marking an important step forward for small and mid-sized farms traditionally focused on naturals. This lot is one of a limited number of washed Tokuma selections sourced by Osito this season, reflecting years of collaboration, trust, and steady quality improvement. This particular coffee was decaffeinated using the sugarcane-derived ethyl acetate method, a process that preserves clarity and sweetness while gently removing caffeine.
