Here we go again, we're rolling out the red carpet for our fourth iteration of Pinnacle! We've switched up the origin this time after a blind cupping between options for sticking to Peruvian, or twisting to a new origin, and we've twisted - bringing forth a Costa Rican from the world famous Aquiares farm, specifically from producer Diego Robelo. This couldn't be a better match-up in our opinion; having roasted speciality coffee from Aquiares back in 2023, the quality control at this farm is exceptional to levels that not many can rival, amongst initiatives of being a Carbon Neutral farm and also holding Rainforest Alliance certification. Aquiares stands for 'land between rivers', in the Huetar Indigenous Language, with this land being the home to 1800 people responsible for the success of the farm - with Diego's Dad, Alfonso Robelo, being the pioneer who kicked it all off in the 1980's. Alfonso initially arrived in Costa Rica seeking refuge from the civil war in Nicaragua, eventually settling down within the enchanting slopes of the Turrialba Volcano (perfect soil rich conditions for speciality coffee). This lot underwent mechanical washing and a 6-hour drying period to initiate partial fermentation. It was then dried for 32 hours in a Guardiola dryer at temperatures ranging from 45°C to 55°C. We'd recommend Pinnacle for espresso brewing, with prominent notes of dark chocolate, hazelnut and brown sugar. However, if you're partial to a richer cafetiere style brew, it is also suitable for filter brewing methods.
