There, smallholder farmers cultivate heirloom Arabica trees using traditional, sustainable methods. This region, rich in biodiversity and cultural heritage, produces some of the world’s most complex coffees. Grown at altitudes between 1,700 and 2,200 meters, ZALA benefits from the ideal conditions that shape its unique character. Volcanic soil, cool mountain air, and natural forest shade all contribute to its exceptional quality. Each step of ZALA’s journey is guided by care and precision. From the way it is grown to how it is roasted, ZALA reflects a deep commitment to transparency, sustainability, and taste. We work through direct trade relationships with the farmers, ensuring fair pay and long-term collaboration. This approach allows us to make a positive impact while guaranteeing traceability from farm to cup. Sustainability is not just a word to us — it’s built into everything we do. ZALA is a washed coffee, processed at origin using clean water and time-honored techniques. Ripe coffee cherries are hand-picked and sorted to remove defects. The cherries are pulped, fermented, and then thoroughly washed to remove mucilage. Finally, the beans are dried on raised beds, turned often for even drying, and monitored to avoid overexposure to the sun. This washed method enhances clarity and brings out bright, vibrant notes in the cup. The flavor profile of ZALA is what sets it apart.
