Flavour Profile: Tinned Pineapple, Guava, Strawberry Jam Heritage • Direct Trade Coffee • From the Region of Antioquia, Colombia • Grown in an altitude of 1,980 masl • Chiroso varietal • Anaerobic Honey Process A beautiful Colombian varietal, the Chiroso is described as Antioquia's own pink bourbon. With more than 30 hectares, 20 of which are cultivated in coffee and 10 in natural reserves, La Secreta has around 100.000 trees divided between 4 different varieties. The Chiroso is a relatively new variety, which originated in the Urrao region of Antioquia, Colombia. Originally cultivated for its resilience and high productivity in the cool climate and high elevations of the area, it is now being celebrated for its complex and floral cup profile. This is our second year of buying from this varietal from La Secreta, and we were excited to see what they could produce after last year's Lactic Honey Chiroso. This coffee still retains the buttery mouthfeel and floral aromatics, however the Anaerobic Honey process adds lots more tropical sweet notes and complexities. In the cup, expect sweet tinned pineapple and guava leading to a long jammy finish. Roast Level: light medium We roast this beautiful coffee to a light-medium level so it is perfect for filter coffee and for espresso drinkers who enjoy bright, fruity shots. For espresso, we recommend it is rested for 2 weeks before use.
