Don Pedro began producing specialty coffee long before the region became known as one of the country’s most celebrated coffee-growing areas. Much of Santa Bárbara’s reputation today can be credited to the work of the Paz family and Beneficio San Vicente, with whom Don Pedro has collaborated for decades. Starting with less than one hectare in the early 1980s, Don Pedro gradually expanded his farm into one of the most respected specialty coffee operations in Honduras. Now in his nineties, he has spent more than 60 years cultivating coffee and passing his knowledge down through his children and grandchildren. Throughout his career, Don Pedro has achieved multiple podium finishes in the prestigious Cup of Excellence competition — with at least nine placements, including five in the top five. Processing This lot features the Kenyan SL28 varietal, a variety prized for its vibrant fruit character and bright acidity. Cherries are hand-picked at peak ripeness before being depulped and dry-fermented in tanks for up to 18 hours. The coffee is then thoroughly rinsed four times before being dried. This careful washed process highlights the clarity and structure of the SL28 varietal. In the Cup Expect a vibrant and expressive coffee with juicy berry sweetness, bright citrus acidity, and a subtle herbaceous complexity.
